Instructions:
- Prepare Filling:
- In a large pan, cook the ground pork or chicken over medium heat until fully cooked. Drain any excess fat.
- Add onions and garlic to the pan and sauté until they become translucent.
- Add shredded cabbage and carrots. Cook for a few minutes until the vegetables are softened.
- Stir in soy sauce, oyster sauce, sesame oil, ginger, salt, and pepper. Mix well. Taste and adjust the seasonings if needed.

- Lay an egg roll wrapper on a clean surface with one corner pointing towards you (diamond shape).
- Place a spoonful of the filling in the center of the wrapper.
- Fold the bottom corner over the filling and tuck it under the filling.
- Fold the side corners towards the center.
- Roll the wrapper tightly away from you, sealing the final corner with a dab of water to secure the edge.
- Heat Oil for Frying:
- In a large, deep skillet or pot, heat vegetable oil to 350°F (175°C).
- Fry Egg Rolls:
- Carefully place a few egg rolls into the hot oil, seam side down, without overcrowding the pan.
- Fry until golden brown and crispy, turning occasionally for even cooking. It usually takes about 3-4 minutes per batch.
- Drain and Serve:
- Remove the egg rolls from the oil and place them on paper towels to drain excess oil.
- Serve the crispy egg rolls with your favorite dipping sauce, such as sweet and sour sauce or soy sauce.
