Grilled Pork with Noodles

Ingredients:

  • 300g pork shoulder or pork loin, thinly sliced
  • 250g rice vermicelli noodles
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • 2-3 sprigs of fresh mint
  • 2-3 sprigs of fresh coriander (cilantro)
  • 2-3 sprigs of fresh Thai basil (optional)
  • 2-3 sprigs of fresh perilla (optional)
  • 1/4 cup roasted peanuts, crushed
  • Lime wedges, for serving

For the marinade:

  • 3 cloves garlic, minced
  • 2 shallots, minced
  • 3 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or sugar
  • 1 tablespoon vegetable oil
  • Freshly ground black pepper

For the dipping sauce:

  • 3 tablespoons fish sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1/2 cup water
  • 1-2 bird’s eye chilies, thinly sliced (optional)
  • 1 clove garlic, minced

Instructions:

  1. Marinate the pork: In a bowl, combine minced garlic, minced shallots, fish sauce, soy sauce, honey (or sugar), vegetable oil, and freshly ground black pepper. Add the thinly sliced pork and toss until well coated. Cover and refrigerate for at least 30 minutes to marinate.
  2. Prepare the noodles: Cook the rice vermicelli noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Drain well.
  3. Grill the pork: Preheat a grill pan or outdoor grill over medium-high heat. Grill the marinated pork slices for 2-3 minutes on each side, or until nicely charred and cooked through. Remove from heat and let rest for a few minutes before slicing into thin strips.
