Fried pork dumplings, also known as “potstickers,” are a favorite in many cuisines, especially in Chinese cuisine. These crispy and savory treats are perfect as a snack, appetizer, or even a main course. Here’s a simple yet flavorful recipe to make these delightful dumplings at home.
Ingredients:
For the Filling:
- 1/2 pound (250 grams) ground pork
- 1/2 cup finely chopped cabbage
- 1/4 cup finely chopped carrots
- 2 green onions, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Dumplings:
- 1 package of dumpling wrappers (usually found in Asian grocery stores)
- 2 tablespoons vegetable oil (for frying)
For the Dipping Sauce:
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- Optional: 1/2 teaspoon chili oil or chopped red chili for added heat
Instructions:
1. Prepare the Filling:
- In a large bowl, combine the ground pork, chopped cabbage, carrots, green onions, minced garlic, soy sauce, sesame oil, grated ginger, salt, and pepper.
- Mix everything together until well combined. You can use your hands or a spoon to ensure the mixture is evenly distributed.
2. Assemble the Dumplings:
- Place a dumpling wrapper on a clean surface. Spoon about 1 tablespoon of the pork filling into the center of the wrapper.
- Moisten the edges of the wrapper with a little water using your finger.
- Fold the wrapper in half to create a half-moon shape, pinching the edges together to seal. You can also pleat the edges for a more traditional look. Make sure the dumplings are well sealed to avoid any filling leaking out during cooking.
3. Cook the Dumplings:
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
- Place the dumplings in the skillet, making sure they don’t touch each other. You may need to cook them in batches.
- Fry the dumplings for about 2-3 minutes, or until the bottoms are golden brown and crispy.
- Carefully add 1/4 cup of water to the skillet (beware of splattering), and immediately cover with a lid. Let the dumplings steam for about 5-6 minutes, or until the water has evaporated and the filling is cooked through.
- Remove the lid and cook for an additional 1-2 minutes to re-crisp the bottoms.
4. Prepare the Dipping Sauce:
- In a small bowl, mix together the soy sauce, rice vinegar, sugar, sesame oil, and optional chili oil or chopped red chili.
5. Serve and Enjoy:
- Transfer the cooked dumplings to a serving plate.
- Serve hot with the dipping sauce on the side.
Enjoy your homemade fried pork dumplings with friends and family!
